3 cups cubed cooked roast beef
1 pound baby red potatoes , cut in half
2 cups water
1 quart beef broth
1/2 teaspoon dried oregano
Salt and pepper to taste
1/4 cup chopped parsley
2 hard-cooked eggs , sliced 1/4 inch thick
Originating in Colombia, Ajiaco is a traditional beef and potato stew that's popular throughout Latin America. This recipe adds red bell peppers and chipotle chile powder for an extra kick of flavor. Instructions

1.In a large pot, heat canola oil over medium-high heat.

3.Add the cubed roast beef, red bell peppers, chipotle chile powder, ground cumin, and dried oregano. Stir to combine.
4.Add baby red potatoes, water, and beef broth. Bring to a boil and then reduce heat to a simmer.
5.Let the stew simmer until the potatoes are tender, about 25-30 minutes.
6.Season with salt and pepper to taste.
7.Serve hot, garnished with chopped parsley and sliced hard-cooked eggs.
