6 dried Chinese mushrooms
1 small roasting chicken
4 garlic cloves , crushed
1/2 teaspoon ginger , finely grated fresh
2 tablespoons oil
1 cup water
2 teaspoons sugar
2 tablespoons coriander leaves , chopped fresh

Instructions

1.Soak the dried Chinese mushrooms in hot water for 15 minutes.
2.Remove the stems and thinly slice the mushroom caps.

5.Add chicken to the pan, cook until golden brown and then add the sliced mushrooms and water.
6.Reduce heat to low, add sugar and cook for another 5 minutes until the chicken is fully cooked.
7.Garnish with coriander leaves and serve hot with rice.
