1 tablespoon ground cumin

1 teaspoon paprika
350 ml chicken stock or 350 ml vegetable stock
good pinch saffron strand
6 spring onions , trimmed and thinly sliced
225 g couscous
1 lemon , juice and zest of
2 red chili , seeded and finely chopped
50 g pine nuts , toasted
Ainsley's Spicy Casablanca Couscous is a North African-inspired dish that packs a punch of flavor and warmth. Instructions

1.In a large saucepan heat 2 tablespoons of olive oil over medium-high heat.
2.Add garlic, cumin, coriander, and paprika. Sauté for 1 minute.
3.Stir in the chicken or vegetable stock and a good pinch of saffron strands.
4.Bring to the boil and then stir in the sliced spring onions.
5.In a separate saucepan, add 225g of couscous and pour over 350ml of boiling water, stir then cover and let stand for 5 minutes.
6.Fluff the cooked couscous with a fork and add the lemon zest and juice, along with the finely chopped chili, and toasted pine nuts.
7.Pour over the onion and stock mixture and stir well to combine. Allow the couscous to absorb all the flavor and serve.
