Instructions

1.Heat the oil in a pot over medium heat and add onions and garlic. Cook for 3-4 minutes until softened.
2.Add tandoori curry paste, mixed vegetables and stir for 2-3 minutes.
3.Add diced tomatoes, tomato sauce, and coconut milk. Stir to mix and bring to boil.
4.Add chickpeas and reduce heat. Simmer for 10-12 minutes.
5.Finally, add peanut butter and stir until completely dissolved and the sauce has thickened.
6.Garnish with chopped herbs, and serve with rice or naan bread.
