Ingredients

3 lbs assorted chicken pieces
3/4 cup rice , uncooked
2 tablespoons sunflower oil or 2 tablespoons butter
1 cup chopped red onion , about 1/2 onion
1 cup chopped bell pepper , about 1 pepper
2 roma tomatoes ( peeled , seeded and chopped or canned )
6 garlic cloves , crushed
2 tablespoons chopped parsley
1 teaspoon dried oregano or 1 tablespoon chopped fresh oregano
1 teaspoon ground cumin
1 teaspoon ground achiote
8 cups chicken broth or 8 cups water
2 potatoes , peeled and diced , about 3 1/2 cups
1 cup chopped carrot
1 cup peas ( fresh or frozen )
2 tablespoons finely chopped cilantro
salt and pepper

Instructions

1.Rinse the chicken pieces and dry them with paper towels.
2.Season the chicken with salt and pepper.

4.Add the chicken pieces to the pot and brown them on both sides, for about 5-8 minutes. Remove the chicken from the pot and set aside.
5.Add the onions, bell peppers, tomatoes, garlic, parsley, oregano, cumin, and achiote to the pot and cook for 5 minutes, or until the vegetables soften.
6.Add the chicken broth or water to the pot and bring to a simmer.
7.Add the potatoes, carrots, and peas to the pot and bring to a boil.
8.Reduce the heat to low and add the rice to the pot.
9.Cover the pot and simmer until the rice is cooked and the vegetables are tender, for about 20-25 minutes.
10.Add the browned chicken back to the pot, along with the chopped cilantro. Simmer for another 5-10 minutes.
11.Season with salt and pepper to taste.
