Ingredients

8 artichokes
2/3 cup lemon juice

4 large eggs
1 teaspoon cornstarch , dissolved in 1 tablespoon cold water

Instructions

3.Add the potatoes and carrots to the pot and sauté for another 5 minutes.
4.Add the artichokes, dill, salt, and lemon juice to the pot.
5.Add enough water to the pot to cover the vegetables. Cover and simmer until the vegetables are tender, about 30 minutes.
6.In a separate bowl, whisk together the eggs and cornstarch.
7.Slowly pour the egg mixture into the pot, stirring constantly.
8.Continue to stir for a few more minutes until the soup thickens.
9.Serve hot.
