Ingredients

2 cups onions , chopped
1 tablespoon peanut oil
1/4 teaspoon cayenne ( optional )
1/4 teaspoon ground ginger
1 banana , very ripe and mashed
1 cup low-sodium tomato juice
1/2 cup apple juice
1/2 cup unhomogenized unsweetened peanut butter

Instructions

1.In a large saucepan over medium heat, sauté onions in peanut oil until slightly browned.
2.Add cayenne if preferred, ginger, and banana to the pan.
3.Continuously stir and cook until banana is mashed and well combined with the onions.
4.Mix tomato juice and apple juice to the pan.
5.Once boiling, reduce heat to low and add peanut butter.
6.Simmer and continuously stir for 5-10 minutes until sauce is smooth and well combined.
