Ingredients

1 lb young okra pods
2 large tomatoes
1 cup fresh corn
2 cups water ( Chicken or Beef stock or broth may be substituted )
2 slices thick lean platter bacon
1 lemon ( zested and halved or thickly sliced and seeded , see bottom )
salt and fresh coarse ground black pepper , to taste

Instructions

1.Wash okra and cut off both ends, then cut it into 1/4 inch slices.

4.Add the corn and tomatoes to the pot and cook for 10 minutes or until the vegetables are tender.
5.Add the okra and water (or stock/broth) to the pot, and bring to a boil.
6.Reduce the heat to low, add salt and pepper to taste, and let it cook for 15 minutes or until the okra is done.
7.Squeeze lemon juice over the soup, and serve hot with rice or bread.
