Ingredients

1 large head garlic , roasted ( see directions )
3 large eggplants , whole with skin on
1 medium sweet onion , chopped
1/2 cup fresh Italian parsley , chopped
1 tablespoon fresh basil , chopped
2 tablespoons olive oil
1/4 teaspoon Tabasco sauce , to taste
salt and pepper , to taste
3 -6 tablespoons tahini ( sesame seed paste ) ( optional )

Instructions

1.Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
2.Cut off the top of the roasted garlic head and carefully squeeze out the roasted garlic cloves from the skin into a large mixing bowl.
3.Pierce the eggplants several times with a fork and place them on the prepared baking sheet.
4.Roast the eggplants for 35-40 minutes, or until the skin is charred and the flesh is soft when pressed.
5.Remove the eggplants from the oven and let them cool for 5-10 minutes before slicing them in half lengthwise and scraping out the flesh into the mixing bowl with the garlic.
6.Add the chopped onion, parsley, basil, olive oil, Tabasco sauce, salt, and pepper to the mixing bowl and stir until well combined.
7.Add the tahini, if using, and stir until well incorporated.
8.Taste and adjust the seasoning as needed.
9.Serve the dip at room temperature with pita bread, crackers, or vegetable dippers.
