Ingredients

4 garlic cloves

4 lbs chicken wings ( about 20-24 )
1/3 cup natural-style peanut butter
1/4 cup cream of coconut

1/4 cup water
1/4 cup red bell pepper ( chopped )
1/8 teaspoon hot red pepper flakes
1 teaspoon soy sauce
coriander sprig ( for garnish )

Instructions

1.In a blender or food processor, puree the garlic, shallots, salt, five-spice powder, paprika, rosemary, cayenne and oil until smooth.
2.In a large bowl, toss the wings with the spice paste. Cover and refrigerate for at least 3 hours or overnight.
3.Preheat the oven to 475°. Line 2 large rimmed baking sheets with foil and generously oil the foil.
4.Arrange the wings on the baking sheets and roast in the lower third of the oven for 45 minutes, until the skin is crisp and the wings are cooked through.
5.Meanwhile, in a small saucepan, whisk the peanut butter with the cream of coconut, chopped garlic, water, red bell pepper, pepper flakes and soy sauce. Simmer over low heat, whisking, until the sauce is thickened and flavorful, about 5 minutes.
6.Transfer the chicken wings to a platter, garnish with coriander sprig and serve the sauce alongside.
