Ingredients

1 cup basmati rice
1 lb lamb ( I made a meatless version )
2 cups mutton broth ( You ca n't find mutton broth ? ? Substitute beef broth . )
1/2 onion , chopped
1/3 cup golden raisin
1 small carrot , grated
2 teaspoons cumin
1 1/2 teaspoons cardamom
1 teaspoon cinnamon
1/2 teaspoon ground pepper
1 teaspoon butter
salt
Kabuli pulao is a popular rice dish in Afghanistan. It is flavorful and hearty, with a unique combination of spices and flavors. Instructions

1.Rinse the rice, then soak it in lukewarm water for 30 minutes. Drain and set aside.

4.Add the raisins and stir for a minute, then add the cumin, cinnamon, cardamom, and pepper, stirring to combine.

7.Remove from heat and let the pulao rest for 10 minutes. Meanwhile, melt the butter in a small pan and pour it over the pulao.
8.Serve hot as a main course.
