Ingredients

40 spring roll wrappers ( approximately 8 inches square )
1 tablespoon flour
1 tablespoon water
oil ( for frying )
1 small onion , minced
1 leek , cleaned and chopped
2 tablespoons olive oil
1/2 lb ground beef or 1/2 lb ground lamb
salt and black pepper , to taste
1/2 teaspoon cumin
2 egg whites , hard-boiled and chopped

Afghani Samboosak is a popular dish in Afghanistan and other parts of the Middle East. Instructions

1.Take a small bowl and mix flour and water to create a sealant. Keep it aside.
2.Heat olive oil in a frying pan over medium heat. Add minced onion and chopped leek, and saute for a few minutes or until they are soft.
3.Add ground meat, salt, black pepper and cumin to the pan and fry for 5-7 minutes until the meat is cooked through. Remove from heat and set it aside to cool.
4.Preheat the oven to 200°C/400°F. Grease a baking sheet with oil and keep it aside.
5.Take a sheet of spring roll wrapper and place it in front of you, on a flat surface. Brush water around the edges of the sheet. Place a teaspoonful of the meat filling in the center of the wrapper. Fold it over diagonally to make a triangle, press down the edges and seal the wrapper using the flour and water mixture.
6.Heat oil for frying in a deep pot. Once the oil is hot, drop the triangle-shaped samboosaks in the oil and fry them for 2-3 minutes or until they turn golden brown.
7.Remove them from the oil and place them on paper towels to get rid of the excess oil.
8.Bake the samboosaks for 5-7 minutes on a greased baking sheet, until they turn crispy brown.
