Aebleskiver Poffertjes are a traditional Dutch and Danish breakfast pastry that translates to 'apple slices' in Danish. While they don't actually contain apples, they are named after their round shape and the traditional apple filling. These unique breakfast treats are often served during holidays and celebrations, but are also enjoyed on lazy weekend mornings. Aebleskiver Poffertjes are crispy on the outside and fluffy on the inside, and can be filled with your favorite jam, nut butter, or other sweet or savory ingredients.

Instructions

.In a large bowl, whisk together the all-purpose flour, whole wheat flour, salt, instant yeast, white sugar, and freshly grated nutmeg.
.Gradually stir in the lukewarm milk and slightly beaten egg until a smooth batter forms.
.Cover and let the batter rise in a warm place for about 30 minutes.
.Heat a non-stick Aebleskiver pan over medium-high heat, and add a few drops of oil to each mold.
.When the pan is hot, spoon the batter into each mold until they are two-thirds full.
.Add a small dollop of jam to the center of each mold and top with more batter, covering the jam completely.
.Cook for 5-7 minutes, or until the edges of the Aebleskiver Poffertjes start to turn golden.
.Using a wooden skewer, gently turn each Aebleskiver Poffertjes over and cook for another 5-7 minutes until evenly browned and cooked through.
