Instructions

1.In a large bowl, mix together eggs, milk, flour, sugar, salt and cream until smooth
2.Melt 2 tablespoons of butter in a pan over medium heat, add the sliced apples, 2 tablespoons of sugar, cinnamon and lemon juice and cook until apples are soft and caramelized.
3.Remove apples from pan and melt small dabs of butter in the same pan over medium heat.
4.Pour 1/4 cup of the pancake batter onto the pan and cook until bubbles form, then flip and cook for additional 1-2 minutes until golden brown. Repeat with remaining batter.
5.Serve pancakes topped with caramelized apples.
