Instructions

1.Rinse the dry adzuki beans in cold water then soak them overnight, or in hot water for about 2 hours.
2.Drain the beans and rinse again. In a large pot, add 6 - 8 cups of water, bring to a boil, then reduce heat to low and simmer for 1 - 1.5 hours, until the beans are tender.
3.Once the beans are cooked, remove from heat and drain off any excess water.
4.In a separate pan, heat the olive oil, onion, and garlic together over medium heat for about 5 minutes until the onion becomes translucent.
5.Add the cooked adzuki beans to the pan with the onion and garlic, then add the vegetarian bouillon cubes, bay leaf, taco seasoning, and crushed red pepper flakes (if using). Stir everything together and let it cook for 10-15 minutes on medium heat. The mixture should be thick.
6.Adjust seasoning to taste and remove bay leaf before serving. Serve as a taco filling or burrito filling or as part of a rice or salad bowl.
