Ingredients

2 lbs lean beef ( slice )
4 slices mortadella ( thin slices ) or 4 slices cooked ham ( thin slices )
1/4 lb ground pork or 1/4 lb beef
1/4 cup grated romano cheese
2 tablespoons breadcrumbs
1 egg , lightly beaten
2 slices minced pancetta or 2 slices bacon
2 minced garlic cloves
1/2 cup peas
1/4 cup chopped fresh parsley leaves
4 hard-boiled eggs
1 medium chopped onion
1 cup red wine
2 cups beef or 2 cups chicken broth
4 tablespoons tomato paste
1 bay leaf
olive oil
salt & freshly ground black pepper

Instructions

1.Preheat the oven to 350F.
2.In a large mixing bowl, combine the lean beef, mortadella or cooked ham slices, ground pork or beef, grated romano cheese, breadcrumbs, lightly beaten egg, minced pancetta or bacon, minced garlic cloves, peas, chopped fresh parsley leaves, salt and black pepper to taste. Mix well.
3.Flatten the mixture onto a sheet of parchment paper or foil to form a large even rectangle. Place the hard-boiled eggs lengthwise in a row on top of the mixture.
4.Gently roll up the meat mixture like a jelly roll, using the parchment paper or foil as a guide. Press the ends and seam of the roll to seal.
5.Tie the roll with butcher's kitchen twine, spacing the twine about 2 inches apart.
6.In a Dutch oven or ovenproof pot, heat some olive oil over medium-high heat. Sear the meat roll on all sides until golden brown.
7.Add chopped onions, red wine, beef or chicken broth, tomato paste, and a bay leaf to the pot. Cover and transfer the pot to the oven. Bake for about 1 hour and 30 minutes, or until the internal temperature of the meat reaches 160F.
8.Remove from the oven and let the meat roll rest for about 10 minutes before slicing and serving.
