Ingredients

10 cups whole milk , Must be WHOLE , RAW and not homogenized ( THIS IS CRUCIAL )
3 teaspoons salt
2 rennet tablets
1 tablespoon cold water

Instructions

1.Heat the milk in a saucepan over medium heat until it reaches 85°C (185°F).
2.While milk is heating, dissolve the rennet tablets in the cold water and set aside.
3.When the milk reaches 85°C (185°F), remove it from the heat and stir in the dissolved rennet.
4.Leave the mixture to settle for 10-15 minutes until you see a solid curd forming.
5.Cut the curd into 2.5 cm (1 inch) cubes using a knife and ladle them into a cheesecloth-lined colander.
6.Sprinkle the salt over the curds and toss well to mix in the salt.
7.Tie the cheesecloth and hang so the remaining whey can drain completely (this should take about 4-6 hours).
8.Remove the cheese from the cheesecloth and store in an airtight container in the refrigerator for up to 2 weeks.
