Roti is a staple food in many parts of India and is typically served with a variety of side dishes. This recipe adds a unique twist to the traditional flatbread by incorporating boiled and coarsely ground peas, giving it a unique texture and flavor. The addition of fresh mint leaves, green chilies, and coriander leaves adds an extra level of zing to this dish. It's best enjoyed hot off the griddle with your favorite dipping sauce or curry.

Instructions

1.In a large mixing bowl, combine the wheat flour, boiled and drained peas, fresh mint leaves, green chilies, fresh coriander leaves, cumin seed, and salt to taste. Mix well.
2.Gradually add water and knead the mixture until it forms a soft dough. Cover and let the dough rest for 10-15 minutes.
3.Divide the dough into equal portions and roll them into balls. Flatten each ball into a disc, dust with flour, and roll out into a thin, round shape of about 6-7 inches in diameter.
4.Heat a skillet or griddle over medium-high heat. Brush lightly with oil or ghee, and cook each roti until it puffs up and is golden brown on both sides. Serve hot with your choice of accompaniment.
