Ingredients

4 cups warm water ( temp between 110-115 degrees )
6 teaspoons active dry yeast
4 tablespoons sugar
4 teaspoons salt
10 cups all-purpose flour
2 egg yolks
2 tablespoons water
cornmeal ( for dusting baking sheets ... ) ( optional )

Instructions

1.In a large bowl, combine warm water, yeast, sugar and salt. Wait until the yeast mixture starts to froth or proofs.
2.Add 6 cups of flour and mix using a stand mixer or hand mixer with a dough hook attachment. Add additional flour, one cup at a time until the dough is no longer sticky.
3.Coat another large bowl with cooking spray and place the dough in the bowl.
4.Cover the bowl with a clean kitchen towel and allow the dough to rise in a warm, draft-free place. This could take around 2 hours.
5.Once the dough has risen, punch it down, and divide into equal portions for the number of rolls or baguettes you want.
6.Form each piece into the desired shape and slice the top of the bread a few times.
7.Combine egg yolks and water together and brush the top of the rolls or baguettes. Use the optional cornmeal to dust the baking sheets before placing the rolls or baguettes on top.
8.Bake in a preheated oven at 375°F for approximately 20-25 minutes, or until golden brown.
