1 pound uncooked white rice
4 cups water , or as needed
1/2 teaspoon salt
2 cups water , or more as needed

2 cups dry lentils , rinsed
1/4 cup vegetable oil , divided
2 large onions , thinly sliced
1/2 teaspoon saffron
1/3 cup hot water
3/4 cup pitted , chopped dates
3/4 cup raisins
Adas Polow, also known as Persian Rice and Lentils, is a savory and aromatic dish that is beloved in Persian cuisine. Instructions

1.Place the rice in a large bowl and rinse with cold water until the water runs clear.
2.In a large pot, bring 4 cups of water and 1/2 teaspoon of salt to a boil over high heat. Add the rinsed rice to the pot and stir.
3.Reduce the heat to medium and let the rice cook, stirring occasionally, until the water is absorbed and the rice is partially cooked.
4.In a separate pot, bring 2 cups of water and salt to a boil over high heat. Add the lentils and cook until tender.
5.Once cooked, drain the lentils and set aside.
6.In a large pan, heat 2 tablespoons of oil over medium heat. Add the sliced onions and sauté until golden brown and caramelized. Remove the onions from the pan and set aside.
7.In a small bowl, mix the saffron and 1/3 cup of hot water. Set aside.
8.Preheat the oven to 350°F.
9.In a large oven-proof pot, add a layer of partially cooked rice, followed by a layer of cooked lentils, and then a layer of caramelized onions.
10.Repeat this layering process, then pour the remaining 2 tablespoons of oil over the top layer of rice.
11.Pour the saffron water over the rice, lentil, and onion layers.
12.Sprinkle the chopped dates and raisins over the top layer.
13.Cover the pot with a lid or foil and bake for 40 minutes.
14.Remove the pot from the oven and let it sit for at least 10 minutes before serving.
