Ingredients

15 fresh curry leaves or 4 bay leaves
3/4 cup coconut ( finely shredded dried unsweetened )
1 1/4 teaspoons ground cumin
1/4 teaspoon cayenne
1/4 teaspoon turmeric
2 garlic cloves , peeled and minced
2 tablespoons vegetable oil
1 teaspoon brown mustard seeds
1 teaspoon raw rice
2 whole dried hot red chiles , stemmed
3/4 lb green beans , trimmed and sliced crosswise into 1/4 inch pieces
1 teaspoon salt
Achingya Thoren is a popular vegetarian curry from the South Indian state of Kerala, known for its rich culinary tradition. Instructions

1.In a small bowl mix together the shredded coconut, ground cumin, cayenne, turmeric, and minced garlic to make a spice paste.
2.Heat the vegetable oil in a large saucepan over medium-high heat. Add the mustard seeds, raw rice, and dried red chiles, stirring constantly for about 20-30 seconds until the mustard seeds start to pop.
3.Reduce the heat to medium and add the green beans and curry/bay leaves, stirring until the green beans are coated in the spice mixture.
4.Add in the spice paste, salt, and 1/4 cup of water, stirring to combine. Cover the saucepan and cook for 8-10 minutes, stirring occasionally, until the green beans are tender and the sauce has thickened.
