Ingredients

1 papaya
1 red bell pepper , julienned
1 green bell pepper , julienned
1 medium carrot , julienned , could also be cut in decorative florets
5 shallots , sliced thinly crosswise
1 large garlic clove , sliced thinly crosswise
1 inch gingerroot , julienned
1/4 cup raisins ( optional )
1 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
1 cup vinegar
1 cup sugar
1 teaspoon salt
Achara, also known as pickled papaya, is a popular appetizer in the Philippines. Made with green papaya, vinegar, and a variety of vegetables, it is a tasty and healthy way to start any meal. This dish has a sweet and sour taste that is perfect for cutting through rich and heavy dishes. Instructions

1.Peel the papaya and cut into thin strips. In a large bowl, combine the papaya, red and green bell peppers, carrot, shallots, garlic, gingerroot, and raisins (if using). Add salt and pepper, toss to combine. Let sit for 10-15 minutes.
2.In a medium pot, combine the vinegar, sugar, and remaining teaspoon of salt. Place over medium-high heat and bring to a boil, stirring to dissolve the sugar.
3.Reduce heat to medium-low and let the mixture simmer for 2-3 minutes.
4.Pour the hot vinegar mixture over the papaya mixture and stir to combine.
5.Transfer the mixture to a large jar with a tight-fitting lid. Let the mixture cool to room temperature before refrigerating. Serve cold.
