Ingredients

4 boneless chicken breasts ( or chicken scalopini to save time )
1 tablespoon dried sage
8 slices prosciutto ( sliced thin )
1/2 cup all-purpose flour
4 -8 slices of easy melting cheese ( my favorite is fontina but you could also use mozzarella )
1 tablespoon butter
1 1/2 tablespoons olive oil
2 tablespoons white wine
3/4 cup reduced-sodium chicken broth
2 tablespoons fresh lemon juice ( around one lemons juice )

Instructions

1.Begin by pounding each chicken breast until they are roughly 1/4 inch thick.
2.Season both sides of the chicken with dried sage and pepper.
3.Cut the prosciutto slices in half and place 2 halves on each chicken breast.
4.Dredge the chicken in flour, shaking off any excess.
5.In a large skillet over medium-high heat, melt the butter and olive oil together.
6.Once the butter has melted and the pan is hot, add the chicken breasts to the skillet.
7.Cook the chicken on each side until it is golden brown and cooked through, roughly 4-5 minutes per side.
8.Once the chicken is cooked, remove it from the skillet and set aside on a plate.
9.In the same skillet, pour in the white wine and chicken broth, using a spatula to scrape up any browned bits from the bottom of the pan.
10.Let the liquid reduce by half, which should take roughly 3-4 minutes.
11.Once the liquid has reduced, add fresh lemon juice to the skillet and stir well.
12.Place the chicken back into the skillet, spooning some of the sauce on top of each breast.
13.Top each chicken breast with 1-2 slices of fontina cheese.
14.Cover the skillet with a lid and let the cheese melt, which should take roughly 2-3 minutes.
