1/4 lb pancetta , diced
6 garlic cloves , sliced
1 onion , finely diced
1/4 teaspoon red pepper flakes
1/2 teaspoon fresh oregano or 1/2 teaspoon fresh thyme
1/2 cup red wine
1/2 cup water
salt
fresh ground black pepper
1/4 cup chopped basil
3 tablespoons grated pecorino romano cheese
2 tablespoons chopped parsley
