Ingredients

1 large onion
2 cups long grain rice
2 ounces lard or 2 ounces chicken fat
2 cups chicken broth
1 cup tomato juice
1 cup diced tomato
1 tablespoon parsley , chopped
1 teaspoon garlic , minced
1 dash ground cumin
1 teaspoon salt
1 dash white pepper
Acapulco style Mexican rice is a staple in Acapulco Mexican Restaurant's menu. This dish is inspired by traditional Mexican rice recipes but with a modern twist. Instructions

1.Begin by rinsing the rice in cold water and draining it.
2.In a large pot, heat the lard or chicken fat over medium-high heat until it's melting. Add onion and garlic and sauté them for a few minutes until onion become tender.
3.Add rice and stir it well to coat it with onion fat mixture. Cook the rice for a few minutes until it turns lightly golden, stirring occasionally.
4.Add tomato juice and chicken broth slowly to the pot while stirring continuously. Also add diced tomatoes, cumin, salt, white pepper and parsley. Mix well to combine all ingredients.
5.Bring the mixture to a boil and then reduce the heat to low. Place a tight-fitting lid on top of the pot and let the rice cook for about 25-30 minutes until all of the liquid is absorbed.
6.Once cooked, take off the heat and let it steam for another 10-15 minutes. Fluff the rice and serve hot.
