Ingredients

1/2 cup vegetable oil
1/3 cup finely chopped onion
3 cloves garlic , minced
1 cup diced peeled carrot
1 1/2 cups diced celery
1 1/2 lbs ground chuck or 1 1/2 lbs very lean hamburger
20 small mushroom caps
1/2 cup sherry wine
1 can tomato paste
1 can diced tomatoes
1 teaspoon salt ( to taste )
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 package small shell pasta
1 package frozen chopped spinach
1/2 cup fresh bread , cubes buttered
1 cup grated sharp cheddar cheese
grated parmesan cheese

Instructions

1.Preheat oven to 350°F.
2.In a large skillet, heat vegetable oil over medium heat. Add onion, garlic, carrot, and celery. Cook until vegetables are soft, about 10 minutes.
3.Add ground chuck and cook until browned, stirring occasionally. Drain off all of the fat.
4.Add mushroom caps and sherry wine. Cook until mushrooms are tender.
5.Add tomato paste, diced tomatoes, salt, black pepper, oregano, and basil. Bring to a boil.
6.Reduce heat and simmer for 10 minutes.
7.Cook pasta according to package instructions.
8.Add frozen spinach to pasta water and cook for 1-2 minutes. Drain pasta and spinach.
9.Stir pasta and spinach into the meat mixture. Mix well.
10.Pour mixture into a large casserole dish. Top with bread cubes and grated cheddar cheese.
11.Bake for 30 minutes, or until cheese is melted and bubbly.
12.Serve hot, topped with grated Parmesan cheese.
