3 pounds fresh spinach , torn
1 large tomato , quartered
4 sprigs fresh cilantro leaves
8 ounces ricotta cheese
coarse sea salt to taste

Instructions

1.In a pan, heat olive oil over medium heat.

7.In a food processor, puree the spinach, quartered tomato, fresh cilantro, and ricotta cheese until smooth.
8.Add the spinach mixture to the pan with the spice mixture. Cook for 5-7 minutes, stirring frequently.
9.Season with coarse sea salt to taste.
