Ingredients

1 cup garbanzo beans ( nokhod )
1 cup dried white bean ( loobia sefeed )
1/2 lb meat , with bones ( mAheecheh )
1 medium onion , peeled
1 medium potato , peeled
1/2 cup long grain rice
1 medium tomatoes
1 tablespoon turmeric ( zard-choobeh )
salt and pepper , to the liking
2 whole dried lemons ( leemoo-amAnee ) or 4 tablespoons lemon juice , if you ca n't find dried lemons
Abgousht is a traditional Iranian stew that dates back several centuries, and it has been enjoyed by generations of Iranians. This hearty and flavorful stew is made from garbanzo beans, white beans, meat, and vegetables. The stew is usually served with flatbread, fresh herbs, and torshi, a type of pickled vegetable. Abgousht is often cooked in a special pot called the dizi, which is made of clay and has a cone-shaped lid. Instructions

1.Soak the dried beans in water overnight.
2.In a large pot, bring 6 cups of water to a boil. Add the soaked beans, meat, and whole peeled onion. Cook on medium heat for 1 hour.
3.Remove any foam and fat that accumulates on top of the stew. Add the long grain rice and turmeric.
4.Cover and cook for another 1.5 - 2 hours, stirring occasionally.
5.Remove the onion and meat bones from the stew. Add the peeled tomato and potatoes. Cook for another 30 minutes.
6.Add salt, pepper, and dried lemons or lemon juice to taste. Mix well.
