Ingredients

2 large onions
2 tablespoons oil
1 tablespoon ground turmeric
1/2 cup yellow split peas
5 cups water
2 cups ground beef
1 cup basmati rice
3 tablespoons fresh parsley , chopped
3 tablespoons fresh cilantro , chopped
3 tablespoons fresh chives , minced
2/3 cup fresh spinach , minced
1 tablespoon butter
1 large garlic clove , minced
4 tablespoons of fresh mint , chopped
salt and black pepper , to taste
yogurt ( optional )
naan bread ( optional )
Aash-e Shalgham or Persian soup with beef is a traditional Persian recipe. This protein-packed dish features yellow split peas, ground beef, basmati rice, and a variety of fresh herbs. Instructions

1.Start by slicing the onions.
2.Heat the oil in a large pot over medium heat and sauté the onions until they are golden brown.

4.Rinse and add the yellow split peas and water to the pot. Bring to a boil and reduce heat to low and simmer until the split peas are tender, for about 55 minutes.
5.In a separate pan, brown the ground beef and add it to the yellow split peas mixture, cooking for another 15 minutes.
6.Add the basmati rice and cook for an additional 25-30 minutes. Add the parsley, cilantro, chives, spinach, garlic, and butter. Simmer for another 15 minutes.
7.Add salt and pepper to taste.
8.Serve hot with a dollop of yogurt and naan bread (optional).
