Ingredients

4 onions , divided
3 tablespoons olive oil
1 teaspoon turmeric
1/4 cup tomato paste
1 teaspoon salt
1 teaspoon pepper
6 cups beef stock
3 tablespoons split peas
2 cups rice , basmati
1 lb hamburger
1 egg
1 teaspoon marjoram
4 scallions , greens and all
2 tablespoons parsley
1 teaspoon coriander
1 teaspoon mint
Aash-E Gojeh Farangi Tomato Soup is a traditional Persian soup, often served during the winter months. The soup is made with a combination of beef stock, tomatoes, split peas, rice, and meatballs seasoned with herbs and spices. The soup is hearty and satisfying, perfect for a cold day. Instructions

1.In a large pot, heat the olive oil over medium-high heat.
2.Add 3 chopped onions and sauté until translucent.
3.Add 1 teaspoon of turmeric and continue to sauté for another 2 minutes.
4.Stir in the tomato paste, salt, and pepper.
5.Add 6 cups of beef stock and bring to a boil.
6.Reduce the heat to low and add 3 tablespoons of split peas.
7.Cover the pot and let it simmer for 30 minutes.
8.Meanwhile, prepare the meatballs by combining 1 lb of hamburger, 1 chopped onion, 1 egg, 1 teaspoon of marjoram, and 1 teaspoon of salt in a bowl.
9.Shape the mixture into small balls and set them aside.
10.After the soup has simmered for 30 minutes, add the meatballs and 2 cups of basmati rice to the pot.
11.Cover and let the soup cook for another 30 minutes.
12.Finely chop 4 scallions, 2 tablespoons of parsley, 1 teaspoon of coriander, and 1 teaspoon of mint.
13.Add the herbs to the soup, stir, and serve hot.
