Ingredients

200 g basmati rice or 200 g long-grain rice
1 kg herbs ( parsley , mint , coriander , spring-onion ends )
500 g ground lamb or 500 g beef
3 tablespoons split peas
3 -4 tablespoons fresh lime juice
2 -3 tablespoons sugar
2 tablespoons marjoram
1 tablespoon mint
4 large onions
cooking oil
salt
black pepper
Aash-e Aab Leemoo is a traditional Persian soup that is typically served during the winter months. Instructions

1.Soak the split peas in water for at least 2 hours.
2.Wash the rice and then put it with the soaked peas, salt, and 2 liters of water in a pot. Bring to a boil over high heat.
3.Lower the heat and simmer for about 1 hour or until the rice and peas are soft.
4.Chop the herbs and mix them with 600 ml of water in another pot, bringing it to a boil.
5.Add the ground meat, marjoram, mint, salt, and pepper to the pot and let it cook for 15 minutes.
6.Mix the herb mixture with the rice and peas and cook for another 40 minutes over low heat.
7.Chop the onions and fry them in cooking oil until golden brown. Add the sugar, lime juice, and remaining water to the onions and boil for 10 minutes.
8.Pour the onion mixture on top of the soup and let it cook for another 10 minutes. Serve hot.
