1 cup water , divided
2 tablespoons peanut oil
1 large serrano pepper , split down the middle leaving halves attached
1 teaspoon cumin seed
1 small head cauliflower , cut into small florets
1 russet potato , peeled and cut into 1/2-inch cubes
1 pinch kosher salt
2 tablespoons freshly minced cilantro leaves , to garnish

Instructions

1.In a blender, blend garlic and ginger with a little bit of water until they form a paste.
2.In a pot over medium heat, add canola oil and hing until fragrant.
3.Add the garlic-ginger paste, ginger paste or grated ginger; cook for 1 minute.
4.Add the coriander and turmeric, cook for another minute.
5.Add potato and 1/2 cup water to the pot and mix well, then cover and cook for 10-15 minutes until the potato is cooked.
6.Add cauliflower, serrano pepper, remaining 1/2 cup water, and salt. Mix well, cover, and cook until cauliflower is tender.
7.In another small pan, heat peanut oil over medium heat. Add cumin seeds into the oil and wait until they splutter. Then pour the oil and cumin seeds into the cauliflower/potato mix.
