Ingredients

1 lb medium firm tofu ( Cubed )
2 green chili peppers
1 tablespoon garam masala
2 tablespoons coriander powder
1 teaspoon red chili powder
1 teaspoon turmeric
asafoetida powder
salt ( according to taste )
olive oil
14 ounces diced tomatoes
2 cups green peas
4 bay leaves
1 large red onion ( Finely Diced )
2 cups tap water
Aarsi's Ultimate Tofu Curry is a vegan twist to the traditional North Indian curry that is usually made from paneer, or cottage cheese. The tofu is used as a substitute for paneer, which makes it protein-rich and vegan-friendly. The green peas add the nutritional punch and make it a complete meal that can be served with rice, naan, or roti. The combination of earthy spices and spicy green chili peppers give this curry a bold flavor and aroma that will tantalize your senses.

Instructions

1.In a pan, heat olive oil and add bay leaves, asafoetida powder, and diced onions.
2.Cook until onions turn translucent before adding diced tomatoes, red chili powder, coriander powder, garam masala, and turmeric for around 5 min.
3.Add cubed tofu and green chili peppers, and stir it well with the masala.
4.Add salt and 2 cups of water, and let it simmer for around 20 min until tofu is cooked properly.
5.Add green peas and let it cook for a further 5 min. Your Aarsi's Ultimate Tofu Curry is ready to serve.

PROS

This Tofu Curry is vegan, gluten-free, and protein-rich, which helps in muscle growth and repair.

CONS

This tofu curry is quite spicy, so people with low spice tolerance may need to adjust the chili peppers quantity.
