Ingredients

1 lb cauliflower ( large green stem discarded and cut in to small florets )
1 russet potato ( peeled and diced )
1 teaspoon cumin seed
1 green chili pepper ( split in to half )
1 teaspoon turmeric powder
1 teaspoon salt
2 tablespoons vegetable oil or 2 tablespoons olive oil
1 tablespoon fresh ginger ( thinly sliced )
1 pinch asafoetida powder
3 tablespoons coriander powder
1 teaspoon red chili powder
1 teaspoon garam masala
2 tablespoons milk ( preferred 2 % )
fresh cilantro leaf , for garnishing

Instructions

1.In a large mixing bowl wash and soak cauliflower florets for 15 minutes in water. Drain the water completely.
2.In a large wok or kadai, heat oil and add cumin seeds. Let them sizzle.
3.Add green chili, ginger, and asafoetida powder. Mix well until ginger is golden.
4.Add diced potatoes, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
5.Add cauliflower florets and mix well to combine everything.
6.Add coriander powder, red chili powder, and garam masala. Mix well.
7.Add 2 tablespoons of water, cover the wok and let the veggies cook in medium flame.
8.After 4-5 minutes, mix everything well, cover again and let it cook for another 4-5 minutes.
9.Finally, add 2 tablespoons of milk and mix well.
10.Garnish with fresh cilantro and serve hot with rice or chapati.
