Ingredients

600 g lamb shoulder or 600 g beef shoulder
50 g split peas
4 dried limes or 1/2 cup fresh lime juice
3 medium onions
6 medium potatoes
cooking oil
salt
black pepper
1 teaspoon turmeric
Aab-Goosht-E Lappeh is a popular Persian dish. It's a hearty stew made with lamb or beef shoulder, potatoes, split peas, and dried limes. Instructions

1.Soak the split peas in water for 30 minutes.
2.Cut the lamb or beef in medium sized cubes and thinly slice 1 onion.
3.Heat some oil in a pot and add the onions. Fry until golden brown.
4.Add the meat cubes and fry until brown on all sides. Add turmeric, salt, and black pepper. Wash and add dried limes if using.
5.Add 6 cups of water or enough to cover the meat. Let it simmer for 1 hour.
6.Peel and cube the potatoes. Add to the pot and continue cooking for another 30-45 minutes, or until the potatoes are well cooked.
7.Drain the split peas and add them to the pot. Continue cooking until the peas are soft and mixed well with the stew.
8.Serve hot with bread or rice.
