5 cups mashed , boiled potatoes
1/2 cup sour cream
2 ounces cream cheese
2 tablespoons butter , softened , divided
1 egg yolk
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 1/2 teaspoons olive oil
1 pound ground lamb
1 pinch salt and ground black pepper to taste
1 can stewed tomatoes with juice , chopped
1 small onion , chopped
1 small carrot , peeled and chopped
1/2 cup peas
1 cube beef bouillon
1 tablespoon all-purpose flour
1 tablespoon Worcestershire sauce
3/4 cup shredded sharp Cheddar cheese
2 teaspoons chopped fresh parsley
2 teaspoons smoked paprika
A Scotsman's Shepherd Pie is a classic comfort food dish that originates from Scotland. Sometimes referred to as cottage pie, this dish traditionally consists of a lamb or beef base with mashed potatoes on top. In Scotland, Shepherd's pie is typically made with lamb and vegetables such as peas, carrots, and onions. This recipe puts a spin on the traditional dish by adding cheddar cheese, herbs, and spices to the mashed potatoes, giving them an extra kick of flavor. Perfect for a cold winter's evening, this dish is sure to warm you up from the inside out.

Instructions

1.Preheat oven to 375°F (190°C).
2.In a large bowl, combine the mashed potatoes, sour cream, cream cheese, 1 tablespoon softened butter, egg yolk, kosher salt, and black pepper. Stir well to fully integrate all ingredients.
3.In a large skillet or frying pan, heat the olive oil over medium heat. Add the ground lamb and cook, stirring regularly, until well-browned on all sides, about 10 to 15 minutes. Use a slotted spoon to remove the lamb from the pan and set aside.
4.In the same pan used to cook the lamb, melt the remaining tablespoon of butter. Add the onion and carrot, as well as a pinch of salt and pepper. Cook until the vegetables are soft and fragrant, about 8 to 10 minutes. Add the peas, stewed tomatoes, beef bouillon cube, flour, and Worcestershire sauce. Stir to fully combine all ingredients.
5.Continue cooking the mixture for 5 to 10 minutes, or until the sauce has thickened slightly. Add the cooked lamb back into the mixture and stir well to combine.
6.Pour the lamb and vegetable mixture into a 9x13 inch (23x33 cm) baking dish. Spoon the mashed potato mixture over the top of the lamb mixture, smoothing it out gently with a spatula.
7.Sprinkle the shredded sharp Cheddar cheese over the top of the mashed potatoes. Top with the chopped parsley and smoked paprika.
8.Bake for 25 to 30 minutes, or until the cheese has melted and the top is golden brown.
