Ingredients

4 -6 cups iceberg lettuce , chopped
4 -6 cups romaine lettuce hearts , chopped
1 can marinated artichokes , diced , save the liquid
1 jar marinated vegetables , rough chopped ( they usually come that way )
1 jar roasted red peppers , thin sliced
1 cup black olives ( I buy halved to save time )
1 cup pepperoncini pepper ( peppadew peppers are great as well )
1 medium red onion , cut in quarters and thin sliced
1 cup grape tomatoes , cut in half
4 ounces fresh mozzarella cheese , diced ( mozzarella balls will also work )
3 -4 teaspoons capers ( optional )
1 teaspoon dried Italian seasoning
liquid from the artichokes and marinated vegetables
garlic ( optional )
pepper
mortadella
salami
prosciutto
parsley
grated parmesan cheese

Instructions

1.Chop iceberg lettuce and romaine lettuce hearts into bite-sized pieces and mix them together in a large bowl.
2.Add diced marinated artichokes, chopped marinated vegetables, sliced roasted red peppers, halved black olives, pepperoncini peppers, sliced red onion, grape tomatoes, and diced fresh mozzarella to the bowl.
3.Mix in optional capers, dried Italian seasoning, and a minced garlic clove, if desired.
4.Drizzle in the liquid from the marinated artichokes and vegetables and season with freshly ground black pepper.
5.Toss salad ingredients until well combined and add sliced mortadella, salami, and prosciutto, as desired.
