12 ounces new potatoes , small red , scrubbed and quartered ( about 6 )
1 teaspoon salt
1 lb green beans , trimmed
1/2 cup nicoise olive
3 hard-cooked eggs , halved
1 large tomatoes , ripe , cored , cut into 8 wedges
1 can tuna , packed in water , drained and flaked
2 tablespoons red wine vinegar
1/8 teaspoon salt
fresh ground pepper , to taste
2 teaspoons Dijon mustard
1/2 cup olive oil
1/4 cup fresh parsley , chopped
3 anchovy fillets ( optional )

Instructions

1.In a medium saucepan, add potatoes and enough water to cover by 1 inch. Add 1 tsp salt and bring it to a boil. Reduce heat to medium and cook until tender, 12 to 18 minutes. Drain and let cool for 5 minutes.
2.Meanwhile, cook green beans in a large pot of boiling water until just tender, 3 to 4 minutes. Drain and immediately rinse with cold water. Transfer to a large bowl.
3.Add potatoes, olives, eggs, tomato, and tuna into the bowl with green beans.
4.In a small bowl, whisk together vinegar, Dijon mustard, 1/8 tsp salt, and pepper. Slowly whisk in olive oil to make a dressing.
5.Drizzle the dressing over the salad and toss to coat.
6.Serve the salad topped with chopped parsley and anchovy fillets (optional).
