Ingredients

3 tablespoons cider vinegar
1 tablespoon instant apple cider drink mix
1/2 cup shredded cabbage

1/2 lb corned beef , lean and thinly sliced and julienne ( or shaved )

Instructions

1.Preheat the oven to 350°F.
2.In a small bowl, whisk together the cider vinegar and apple cider drink mix. Add the shredded cabbage and toss to coat. Set aside.
3.In another small bowl, whisk together the reduced-fat mayonnaise and Dijon mustard.
4.Spray the rye bread with nonstick cooking spray and place on a baking sheet.
5.Layer each slice of bread with 2 slices of reduced-fat Swiss cheese and half of the corned beef.
6.Bake in the preheated oven until the cheese is melted and bubbly, about 5-7 minutes.
7.Top each sandwich with the remaining corned beef, the cabbage slaw, and the mayonnaise-mustard mixture.
8.Serve immediately.
