Ingredients

8 large sausages ( Such as Toulouse , Beef or Venison )
4 onions , peeled and cut into large chunks
fresh thyme
200 g dry green lentils ( Puy )
2 -4 garlic cloves , peeled and chopped
300 ml good quality beef stock or 300 ml consomme
150 ml red wine , such as Bordeaux
salt

Instructions

1.Heat the sunflower oil in a large casserole dish or heavy-based saucepan.

4.Pour in the beef stock or consomme and the red wine, season with salt and pepper, and bring to a boil.
5.Reduce the heat to low, cover the pan, and leave to simmer for 1 hour until the sausages are cooked through and the lentils are tender.
