sea salt & freshly ground black pepper , to taste
1 -2 teaspoon olive oil
8 ounces sugar baked beans , low salt
4 slices whole wheat bread , I like crusty bread
2 eggs

Instructions

1.Preheat the oven to 400°F (200°C).
2.Slice the tomatoes and mushrooms and place them on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Roast for 20 minutes.
3.In a skillet, cook the bacon and sausages over medium heat until browned. Remove from heat.
4.Toast the bread slices and place two on each plate.
5.Heat the baked beans and spoon over the toast.

7.Place the bacon, sausages, and roasted vegetables next to the beans. Top each plate with a fried egg and season with salt and pepper.
