Ingredients

10 eggs
2 tablespoons olive oil
2 small courgettes , finely chopped ( zucchini )
4 spring onions , thinly sliced ( green onions )
4 stems of chives with fresh edible flowers , finely sliced and flowers shredded
4 roasted red peppers , from a jars , drained and finely diced
4 garlic cloves , peeled and crushed
1 small red chile , deseeded and finely diced
salt and pepper
400 g cream cheese or 400 g boursin cheese
4 tablespoons milk , to mix
4 tablespoons fresh chives , snipped in to small pieces
1 tablespoon fresh oregano , finely chopped
1 tablespoon fresh basil , finely chopped
salt and pepper
rocket or mixed salad green
fresh shaved parmesan cheese

Instructions

1.In a large bowl, whisk the eggs together.
2.Heat the olive oil in a 24cm non-stick frying pan, then add the courgettes, spring onions, chives, red peppers, garlic, and chile and sauté until soft.
3.Season the vegetables with salt and pepper, then add the eggs to the pan, stirring gently to combine. Cook over medium heat for 8-10 minutes, or until the eggs are set.
4.In a separate bowl, mix together the cream cheese, milk, chives, oregano, basil, salt, and pepper until smooth.
5.Slide the omelette onto a plate, smoothing the surface.
6.Spread the cheese mixture evenly over the top of the omelette, then serve garnished with rocket or mixed salad and fresh shaved parmesan cheese.
