Ingredients

2 cups chicken broth
3/4 cup water
1 1/2 cups long-grain white rice
5 tablespoons vegetable oil
1 lb thin pork loin chop , thinly sliced
salt & freshly ground black pepper
2 teaspoons Chinese five spice powder
2 large eggs , beaten
1/2 lb shiitake mushroom , stemmed and thinly sliced
1 red bell pepper , seeded and thinly sliced
2 small carrots , shredded ( enough to equal a couple of handfuls )
1 scallion , thinly sliced on an angle
1 cup frozen peas , thawed
3 garlic cloves , finely chopped
1 piece fresh ginger
1/3 - 1/2 cup tamari ( dark soy sauce )

Instructions

6.Season the pork with salt, pepper, and 5-spice powder.
7.Once the pan is hot, add the seasoned pork and cook until browned, around 2-3 minutes.
8.Remove the pork from the pan and set aside on a plate.
9.In the same skillet, add 1 tablespoon of oil and pour the beaten eggs into the pan.
10.Cook the eggs with a spatula and once set, break into pieces and set aside with the pork.
11.Add the remaining 2 tablespoons of oil to the pan and add the sliced mushrooms and red pepper.
12.Cook until the vegetables are tender, around 3-4 minutes.
13.Add the shredded carrots, sliced scallions, frozen peas, garlic, and grated ginger to the pan.
14.Cook for an additional 2-3 minutes until the vegetables are just tender.
15.Return the pork and eggs back to the pan, add the rice, and pour soy sauce over the mixture.
16.Stir until everything is evenly coated, then serve hot.
