8 ounces cremini mushrooms , sliced
8 ounces baby portabella mushrooms , sliced
8 ounces shiitake mushrooms , sliced

Instructions

1.In a Dutch oven or large pot, heat olive oil over medium-high heat. Add the stew meat and cook until browned on all sides, stirring occasionally.

3.Add beef broth, red wine, chopped onion, mashed garlic, mixed vegetables, and seasoned tomatoes including the juice. Bring to a boil then reduce heat and simmer for 30 minutes.
4.Add barley, sliced mushrooms, and continue to simmer for an additional 30 minutes or until barley is tender and meat is cooked through.
