Ingredients

8 stalks fresh celery , finely chopped with leaves
8 -12 slices Canadian bacon , cut in thin strips
2 quarts water
3/4 cup dry couscous
2 cups water
2 tablespoons margarine
1 teaspoon salt
1 can green beans , drained cut in small pieces
1 tablespoon cilantro
1 tablespoon italian seasoning

Instructions

1.In a large pot, add 2 quarts of water and bring to a boil.
2.Add the chopped celery and strips of Canadian bacon, reduce heat and let simmer for 30 minutes.
3.In a separate pot, boil 2 cups of water. Add margarine, salt, and couscous. Stir well and let simmer for 10 minutes.
4.Drain and rinse the canned green beans, then chop them into small pieces.
5.Add the cooked couscous, green beans, cilantro, and Italian seasoning to the pot with the celery and Canadian bacon. Simmer on low heat for an additional 10 minutes.
