1 lb dried pappardelle pasta ( or other long cut pasta-I like whole wheat or whole grain )
This creamy sun-tomato basil cashew pasta is a delicious and healthy twist on classic pasta dishes. Instructions

1.Cook the pasta according to package instructions.
2.While the pasta is cooking, place the cashews, garlic, sun-dried tomatoes (with a bit of the oil), half of the grape tomatoes, basil, oregano, parmesan cheese, red pepper flakes, and pepper into a food processor or blender.
3.Process until a smooth and creamy sauce forms.
4.Once the pasta is done, drain it and return it to the pot.
5.Pour the cashew sauce over the pasta and stir until well coated.
6.Add the remaining grape tomatoes and stir gently.
7.Serve immediately, garnished with extra parmesan cheese and fresh basil leaves if desired.
