Paella is a traditional Spanish dish that packs a lot of flavor into each bite. Typically made with long-grain rice and a variety of seafood, meats, and vegetables, it is a dish that requires patience and attention to detail. However, this recipe is a quick and easy take on the classic dish, using Minute Rice and precooked shrimp or scallops. The addition of pepperoni and Tabasco sauce add a unique twist to the dish and give it some extra flavor. This dish is perfect for those busy weeknights when you need something quick and nutritious. It can also be easily adapted to suit your taste preferences by swapping out the protein or vegetables.

Instructions

1.Heat oil in a large nonstick skillet over medium-high heat.
2.Add the shrimp or scallops and garlic; cook and stir until shrimp or scallops are cooked, about 2-3 minutes.
3.Reduce heat to medium. Add Minute Rice and cornstarch to skillet; mix well.
4.Gradually stir in chicken broth. Add diced tomatoes, pepperoni, peas and Tabasco; mix well.
5.Bring mixture to a boil. Cover skillet with a tight-fitting lid. Reduce heat to low and simmer until rice is tender and liquid is absorbed, about 5 minutes. Fluff with fork.

PROS

The 10 Minute Paella is a flavorful dish that can be thrown together in a hurry.
It is also a great way to use up leftover rice and frozen vegetables.

The dish is packed with protein from the shrimp or scallops, and the tomatoes and peas add a healthy dose of vitamins and minerals.

CONS

Using Minute Rice instead of traditional rice means that you may lose some of the classic texture of a Paella.

The dish is also high in sodium, so it may not be a good option for those on a low-sodium diet.

HEALTH & BENEFITS

This dish is a good source of protein and fiber, which can help keep you feeling full and satisfied.
