Ingredients

2 tablespoons butter

2 lbs yellow onions , sliced 1/4-inch rounds
1/2 teaspoon sugar
1 1/2 tablespoons flour
2 cans beef broth
2 cans low sodium beef broth
1/4 cup sherry wine
1 loaf French bread
2 cups grated swiss cheese
2 tablespoons grated parmesan cheese
2 tablespoons grated romano cheese
2 garlic cloves , each cut in half

Instructions

1.In a large soup pot, heat the butter and 2 tablespoons of olive oil over medium heat.
2.Add the sliced onions and sprinkle with sugar.
3.Cook onions for 45 minutes, stirring occasionally until the onions have caramelized and turned a rich caramel color.
4.Sprinkle flour over the caramelized onions, stir constantly for 1 minute to cook the flour.
5.Add in the sherry wine, and reduce it by half while scraping the bottom of the pan to loosen any cooked-on bits.
6.Add in the beef broth and bring the soup to a simmer.
7.Simmer the soup for 10 minutes.
8.Preheat your broiler. Ladle the soup into oven-safe bowls. Place a piece of French bread (about 1/2 inch thick) on top of each serving of soup.
9.Sprinkle the Swiss cheese, Parmesan cheese, and Romano cheese each over the bread in the soup bowls.
10.Place the bowls on a baking sheet and place them under the broiler for 2 to 3 minutes, or until the cheese melts and is bubbly. Keep an eye on it to make sure they don’t burn.
11.Remove from the oven and serve hot.
