Ingredients

4 large lamb shanks
1 large onion , chopped
1 carrot , chopped
2 celery ribs , chopped
2 garlic cloves , chopped

2 -3 tablespoons flour
2 -3 cups vegetable stock
3 tomatoes , quartered
3/4 cup honey
2 tablespoons olive oil

Instructions

1.Preheat oven to 325°F.
2.In a Dutch oven heat the olive oil over medium-high heat.
3.Season the lamb shanks with salt, flour and half the ras-el-hanout spices. Brown them in the hot oil for 2-3 minutes per each side, and then remove them from the pot.
4.In the same pot, add the onions, carrot, and celery and stir occasionally until they start to caramelize, 10-15 minutes. Add garlic and cook for another minute.
5.Add the remaining ras-el-hanout to the pot and stir for a minute or two.
6.Add the tomatoes, honey, and vegetable stock and stir everything together.
7.Return the lamb shanks to the pot, making sure they're covered in the sauce.
8.Bring to a simmer and then cover and place in the oven for 2-2.5 hours, or until the lamb is tender.
