Ingredients

8 lamb chops or 8 skinless chicken pieces , on bone but skin & fat free if possible
1 large onion
3 garlic cloves
2 medium carrots
2 medium courgettes ( zucchini )
2 large potatoes
1/4 swede or 1/4 turnip
1 parsnip
2 -3 stalks celery ( or khorchef )
1 cup chickpeas , drained
2 teaspoons ras el hanout spice mix
salt & pepper
1 pinch dried mint
1/2 tablespoon sunflower oil or 1/2 tablespoon vegetable oil
1 cup of tinned plum tomato , liquidised
1 1/2 liters water
1 large green chili pepper ( the Algerian ones ) ( optional )
500 g medium couscous
1 tablespoon ghee ( smen )
1 1/2 tablespoons margarine
1 glass water

Couscous is a staple in North African cuisine, and this traditional lamb or chicken recipe is a delicious way to experience the flavors and spices of the region. Instructions

1.In a large pot, heat the sunflower oil or vegetable oil over medium heat.
2.Add the lamb chops or chicken pieces and sauté until browned on all sides, then remove from the pot and set aside.
3.Add the chopped onion, garlic, and diced vegetables to the pot and sauté until tender.
4.Stir in the drained chickpeas and the ras el hanout spice mix.
5.Return the lamb or chicken to the pot and pour in the liquidised plum tomato and 1 1/2 liters of water.
6.Add the green chili pepper if desired and season with salt, pepper, and dried mint.
7.Bring the mixture to a simmer and let cook for 30-45 minutes until the meat is tender and the vegetables are cooked.
8.In a separate pot, prepare the couscous according to package instructions using 1 tablespoon of ghee (smen) and 1 1/2 tablespoons of margarine.
9.Fluff the cooked couscous with a fork and drizzle with olive oil before serving alongside the lamb or chicken stew.
